Banana Drizzle cake recipe with Barefaced groceries

Recipe : Banana Drizzle Loaf

This week we’ve been reviewing Bearfaced groceries and we used the bananas from their box to create a brand new recipe. This banana loaf is free from stodge and is exclusive to us, created by our founder, Martina Mercer (also known as BatMum)

Here it is:

Ingredients:

  • 140 grams butter
  • 140 grams sugar
  • 180 grams plain flour
  • 3 eggs
  • 3 bananas
  • teaspoon baking powder
  • vanilla essence
  • Icing sugar
  • Flake

 

Method:

Cream together the sugar and butter then add the eggs. Add the flour, salt, vanilla and baking powder and mix really well. Mash up the bananas then mix again. It should be slightly lumpy.

Bake at 180 degrees for one hour (you may need to cover the top with foil to stop it burning). You can adjust the time to suit your oven as we used an AGA, generally, low and long is best to avoid all the stodge.

Remove and allow to cool then make the icing. Simply combine icing sugar with water to a drizzle consistency and drizzle over the top. It’s fine if the loaf it still slightly warm as it will soak into the sponge. You may want to drizzle again once it’s cooled.

Crumble a flake and sprinkle on top and watch as it’s all gobbled up!
